Swordfish

  • 1 swordfish
  • olive oil
  • salt
  • black pepper freshly ground
  • lemon juice

Sauce ingredients

  • 1 egg
  • 1 clove garlic roughly chopped
  • 120 ml olive oil
  • 1 tbsp lemon juice
  • 2 sprigs fresh oregano dried is fine too
  • salt
  • black pepper freshly ground

Swordfish

  • Sprinkle the swordfish steaks in a shallow dish with salt, pepper, seasonings, olive oil, and lemon juice
  • Leave them to marinate for a few hours or overnight, turning them frequently
  • Preheat the grill and place the marinated steaks on it
  • Grill the steaks for a few minutes, turning them once

Sauce

  • Blitz the egg and garlic in a blender
  • With the machine running, drizzle in the oil gradually
  • Once the sauce reaches a thick consistency, finely chop the oregano leaves
  • Stir in the chopped oregano, lemon juice, salt, and pepper
  • Serve the sauce with the fish
