  • 1 tbsp butter
  • 1 tbsp olive oil
  • salt
  • black pepper freshly ground
  • Pre-heat the oven to 230°C (450°F)
  • Peel the potatoes and cut them into 5cm cubes
  • Place the butter and oil in a baking dish, and place it in the oven until the butter is melted
  • Once melted, add the potatoes, salt, and pepper to the baking dish
  • Cook for 1 hour, turning the potatoes every 20 minutes or so
  • To achieve crispy potatoes, ensure that they are spread out evenly in the baking dish
