  • 1.8 - 2.3 kg pork belly
  • 120 - 160 ml soy sauce
  • 120 - 160 ml sherry
  • 80 ml water
  • 1 tbsp sugar
  • Cube the pork
  • Combine the remaining ingredients and pour the mixture over the pork
  • Ensure the dish is tightly covered and bake in a slow oven at 135 - 150°C for a considerable amount of time (1 ½ hours)
  • The dish may become quite greasy, so it might be necessary to skim off a generous layer of fat from the top. However, bear in mind that the fat adds to the overall flavor
