  • 1 kg chicken breast fillets
  • 60 ml sherry or sweet white wine
  • 125 ml light soy sauce
  • 2 cm ginger grated
  • 2 cloves garlic
  • ¼ tsp black pepper freshly ground
  • 1 tsp sugar
  • Cut the chicken into 2 cm pieces
  • Combine the chicken with all the other ingredients
  • Skewer the chicken pieces, reserving the sauce for brushing
  • Place the skewers on the barbecue and cook until the chicken is cooked through
